Chicken onion cups
- 2 large onions, whole
- 4 large chicken breasts
- 1/2 cup sweet peppers chopped
- 1 tbsp paprika
- 1/4 tsp celery salt
- 1/4 tsp ground black pepper
- 1/2 tsp granulated garlic powder
- 1/3 cup chopped celery
- 1/4 cup chopped parsley
- 1 cup shredded cheddar cheese
- 1 quart water
- 2 tbsp butter
- Preheat oven 425 Fahrenheit
- Boil the chicken in water, salt, and celery.
- Boil till chicken is done.
- Cut two onions in half lengthwise.
- Hollow them out..set into a cupcake pan
- Shred the chicken add to a pan with butter, paprika, pepper, inside of onions, chopped sweet peppers, garlic, and parsley.
- Add some of the chicken water.
- Just to keep moist.
- When onions and peppers are soft, add chicken mixture to hollowed onions.
- Then top with cheese bake in oven 20-25 minutes.
