Salsa-Chicken Tostadas
- 1 lb. (450 g) boneless skinless chicken breasts, cut into 1/2-inch pieces
- 1/2 cup water
- 1/2 pkg. (35 g) 40%-less-salt taco seasoning mix
- 1 cup refried beans, warmed
- 4 small tostada shells
- 1/2 cup shredded Cracker Barrel Shredded Light Tex Mex Cheese
- 1 cup shredded lettuce
- 1 avocado, chopped Whole Foods 5 ea For $5.00 thru 02/09
- 1/4 cup salsa
- 1/4 cup light sour cream
- Cook and stir chicken in large nonstick skillet on medium-high heat 3 min.
- or until no longer pink.
- Add water and seasoning mix; simmer on medium-low heat 5 min.
- or until chicken is done and sauce is thickened, stirring occasionally.
- Spread beans onto tostada shells; top with layers of chicken mixture and remaining ingredients.
