Cilantro Chicken with Sweet Chili Sauce
- 1/4 cups Extra Virgin Olive Oil Plus Extra For Your Grill Grate/pan
- 3 Tablespoons Garlic, Minced
- 1 teaspoon Salt
- 1/2 bunches Fresh Cilantro (a Big Handful), Finely Chopped
- 1- 1/2 pound Boneless/skinless Chicken Thighs, Fat Trimmed
- 3/4 cups Sweet Chili Sauce
- Whisk together the olive oil, garlic, salt, and cilantro in a small bowl.
- Pour the mixture into a large, plastic Ziplock bag.
- Add the chicken thighs to the bag, and zip the bag shut, making sure that all of the air is removed from the bag.
- Move it around to make sure all of the chicken is coated with the cilantro mixture.
- Put it into the refrigerator and marinate overnight or for at least 6-8 hours.
- Preheat a grill or grill pan (I used a grill pan) to medium meat, and coat with olive oil or oil spray.
- Take the chicken out of the bag and place onto the grill.
- Grill on the first side for about 5 minutes.
- Flip the chicken and grill for another 4-5 minutes, or until the chicken is cooked through.
- Remove the chicken from the grill, and place onto a serving platter.
- Brush the chicken with a generous amount of sweet chili sauce, and serve!
