Pierogies with Smoky Mushrooms
- 1 package frozen potato pierogies
- 4 slice bacon
- 1 medium onion
- 1 package sliced baby bella mushrooms
- 1 can diced tomatoes with garlic and onions
- Cook pierogies according to package directions for boiling.
- Meanwhile, in a large skillet, cook bacon over medium-high heat until crisp.
- Remove and crumble.
- Discard all but 2 tsp of drippings.
- Add onion to skillet with drippings and cook, stirring, 3 minutes.
- Add mushrooms and 1 Tbsp water; cook 3 minutes or until mushrooms are softened.
- Add diced tomatoes and bring mixture to a boil.
- Add pierogies and bacon to skillet and heat through before serving.
