Holiday Quick Bread Recipe

  1. Preheat oven to 350 degrees.
  2. Mix together sugar, vegetable oil, lowfat milk, egg and vanilla extract in a large bowl; beat well.
  3. Add in flour, baking pwdr and salt.
  4. Pour batter into a greased and floured 9 inch loaf pan.
  5. Bake for 50-60 min, or possibly till wooden toothpick inserted in center comes out clean.
  6. Cranberry Bread: Add in 1 tsp.
  7. orange extract, 1 tsp.
  8. cinnamon and 1 1/2 c. minced cranberries to Basic Batter.
  9. Bake as above.
  10. Fresh Apple Bread: Make Basic Batter as above, except divide sugar and mix together 3/4 c. sugar (of the 1 c. total), vegetable oil, lowfat milk, egg and vanilla extract in a large bowl; beat well.
  11. Add in flour, baking pwdr and salt.
  12. Pour half the batter into a greased and floured 9 inch loaf pan.
  13. Toss 2 c. minced apples with the remaining 1/4 c. sugar and place over batter.
  14. Pour remaining batter over apples.
  15. Bake for 50-60 min or possibly till wooden toothpick inserted in center comes out clean.
  16. Yield 8-12 slices.
