Holiday Quick Bread Recipe
- 1 c. sugar
- 4 tbsp. vegetable oil
- 1 c. lowfat milk
- 1 egg
- 1 teaspoon vanilla extract
- 2 c. all-purpose flour
- 3 teaspoon baking pwdr
- 1 teaspoon salt
- Preheat oven to 350 degrees.
- Mix together sugar, vegetable oil, lowfat milk, egg and vanilla extract in a large bowl; beat well.
- Add in flour, baking pwdr and salt.
- Pour batter into a greased and floured 9 inch loaf pan.
- Bake for 50-60 min, or possibly till wooden toothpick inserted in center comes out clean.
- Cranberry Bread: Add in 1 tsp.
- orange extract, 1 tsp.
- cinnamon and 1 1/2 c. minced cranberries to Basic Batter.
- Bake as above.
- Fresh Apple Bread: Make Basic Batter as above, except divide sugar and mix together 3/4 c. sugar (of the 1 c. total), vegetable oil, lowfat milk, egg and vanilla extract in a large bowl; beat well.
- Add in flour, baking pwdr and salt.
- Pour half the batter into a greased and floured 9 inch loaf pan.
- Toss 2 c. minced apples with the remaining 1/4 c. sugar and place over batter.
- Pour remaining batter over apples.
- Bake for 50-60 min or possibly till wooden toothpick inserted in center comes out clean.
- Yield 8-12 slices.
