Turkey Kofta Pitas
- 20 ounces, weight Ground Turkey
- 1/2 whole Yellow Onion, Finely Chopped
- 3 cloves Garlic, Minced
- 1 teaspoon Cumin
- 1 teaspoon Pepper
- 1 teaspoon Salt
- 1 teaspoon Coriander
- 1 teaspoon Turmeric
- 1/4 cups Parsley, Chopped
- 1 whole Egg
- 2 Tablespoons Olive Oil
- 1/2 cups Nonfat Plain Greek Yogurt
- 2 teaspoons Dill, Finely Chopped
- 1/2 whole Lemon, Juiced
- 1 teaspoon Pepper
- 8 whole Whole Wheat Pita Pocket Halves
- 1 whole Tomato, Cut Int 1/4 Inch Slices, And Then Halved
- 1/4 whole Red Onion, Thinly Sliced
- 1/4 cups Parsley, Chopped
- 1/4 cups Hummus

- In a large bowl, mix the ground turkey with the remaining ingredients in the Koftas list (except the oil).
- Make sure the ingredients are evenly distributed.
- Form the mixture into 1 1/2 inch wide patties.
- Add the olive oil into a large frying pan and heat to medium high heat.
- Once hot, place some of the turkey patties into the pan and cook 4 minutes per side.
- Cook in batches until all of them are finished.
- Set aside.

- Meanwhile, make tzatziki.
- In a small bowl, add Greek yogurt, and the remaining ingredients.
- Refrigerate until ready to use.

- To make pitas, place 2 turkey patties into each pita pocket half.
- Add a slice of tomato, a few slices of red onion, some parsley, tzatziki and hummus.
- Enjoy!
