Fried Rice
- 1 cup rice
- 6 cups water
- 3 tablespoons butter
- 1/2 cup finely chopped onions
- 1/4 cup slivered blanched almonds
- 1/2 cup finely chopped green pepper
- 1/2 cup finely diced, thinly sliced cooked ham
- Salt to taste if desired
- Freshly ground pepper to taste
- Rinse and drain the rice.
- Bring the water to the boil and add the rice.
- Let boil until rice is tender, about 17 minutes.
- Drain thoroughly.
- Meanwhile, heat 2 tablespoons butter in a heavy saucepan and add onions and almonds.
- Stir and cook until mixture is lightly browned.
- Add green pepper and ham and cook, stirring, about 5 minutes.
- Add the rice to the green pepper mixture and stir in remaining one tablespoon butter, salt and pepper.
- Stir to blend well.
- Cook 5 minutes, stirring.
