Sweet Sour Chicken

  1. Combine chicken, salt, egg and cornstarch.
  2. Mix well with your hand.
  3. Heat oil until it is smoking hot.
  4. Drop chicken into oil one piece at a time.
  5. Don't crowd the pieces, do this in batches.
  6. Deep-fry until crispy, about 3 minutes.
  7. Remove and set aside.
  8. Leave oil in pot, you'll reuse it in step 3.
  9. To make sauce: Pour water, sugar, tomato ketchup and vinegar into saucepan.
  10. Bring to a boil.
  11. Stir in dissolved cornstarch.
  12. Add peppers and pineapple chunks.
  13. Reheat oil until it is smoking hot.
  14. Fry chicken 1 minute more.
  15. Remove to a platter.
  16. Pour sauce over chicken, serve hot with steamed rice.
