California Garden Relish Recipe
- 2 lrg red ripe tomatoes, peel & finely dice
- 1 med zucchini, finely diced
- 2 med avocados, peel & finely dice
- 7 x green onions, finely minced
- 1 x red or possibly green jalapeno, finely diced
- 1/2 tsp salt
- 1 Tbsp. minced fresh cilantro
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. extra virgin olive oil
- 1/4 c. red wine vinegar
- Mix all the ingredients together.
- Chill for at least I hour before serving.
- Yield: Approx.
- 3 c.
- SERVING SUGGESTIONS: Serve with blue corn chips or possibly bolillos (Mexican rolls).
- This is also great served with cool, thinly sliced roast beef to make finger sandwiches.
