Assorted Sausage and Vegetable Braise
- 2 lb assorted sausage, I used hot and sweet italian, garlic and cheese and breakfast sausage, use your favorites
- 2 peppers, I used one bell pepper and one italian sweet pepper
- 1 large onion, sliced
- 6 button mushrooms, sliced
- 3 clove minced garlic
- 1 28 ounce can crushed tomatos
- 1/2 tsp black pepper and salt to taste
- 1/2 tsp italian seasoning
- 1/4 tsp red pepper flakes
- 1 tsp hot sauce, such as franks
- 1/4 cup grated parmesan cheese and more for adding at serving time
- In a large skillet add a film of olive oil add sausage and brown on all sides, remove to a plate and add peppers, onions, garlic, and mushrooms saute 5 minutes, add remaining ingredients except cheese, return sausage to skillet and combine with sauce, cover and cook on low 35to 45 minutes, add cheese stir to combine, transfer to serving dish and serve with extra cheese on the side
- Serve with crusty bread or pasta and a green salad!
