Cheese-Stuffed Pattypans

  1. Preheat oven to 350 degrees.
  2. Wash squash and slice off tops above scalloped edges; discard.
  3. Scoop out seeds from center and discard.
  4. Place squash shells in large skillet.
  5. Pour 1/4 inch of water into skillet; cover.
  6. Bring to a boil over high heat; reduce heat to medium-low.
  7. Simmer 5 minutes.
  8. Transfer squash, cut side up, to greased 8 x 8-inch baking dish with slotted spoon; set aside.
  9. Heat butter in large skillet over medium-high heat until melted and bubbly.
  10. Add celery and onion; cook and stir until tender.
  11. Add water and stuffing mix.
  12. Stir to absorb water.
  13. Stir in cheese.
  14. Spoon mixture into squash shells.
  15. Bake 20-30 minutes until squash is fork-tender and stuffing is lightly browned.
  16. Garnish as desired.
  17. Serve immediately.
