Almond Pumkin Muffins With Struesel Topping Recipe
- 1/3 c. Margarine (reduced calorie)
- 1 c. Brown sugar
- 1/3 c. Light molasses
- 2 x Egg whites
- 1 c. Pumpkin
- 1 c. Oat bran
- 1 c. Flour
- 1 Tbsp. Pumkin pie spice
- 1/2 tsp Baking soda
- 1/4 tsp Baking pwdr
- 1/4 tsp Salt (optional)
- 1/2 c. Whole almonds (minced)
- 1/4 c. Sugar
- 1/2 tsp Cinnamon
- 2 Tbsp. Flour
- 1 Tbsp. Margarine
- Preheat oven to 350 and spray muffin c. with cooking spray.
- Cream together magarine, sugar, and molasses.
- Add in egg whites and pumkin.
- Add in dry ingredients and stir till moistened.
- Add in almonds.
- Fill muffin c. 3/4 full.
- Combine struessel topping ingredients, cutting in margarine till mix is crumbly.
- Sprinkle struessel topping over muffin batter.
- Bake for 35-40 min till wooden pick comes out clean.
