Mcfadden Stew Recipe
- 4 lbs. stew beef
- Salt & pepper to taste
- 1/2 c. flour
- 2/3 c. carrots, cubed
- 1 c. turnips, cubed & uncooked
- 1 sm. onion, cut in thin slices
- 1/4 c. water
- Cut meat into 1 1/2 inch cubes.
- Sprinkle with salt and pepper and dredge in flour.
- Grease a frying pan.
- Add in meat, stir constantly to sear all surfaces quickly.
- When well browned, put in a saucepan.
- Rinse frying pan with boiling water and pour over meat.
- Cover meat with boiling water and boil 5 min.
- Reduce heat and simmer till meat is tender (3 hrs for lesser cuts).
- Add in carrots, turnips, onion, salt and pepper for last hour of cooking.
- One half hour before stew is done, skim off fat and add in potatoes.
- When potatoes are done, thicken with 1/4 c. flour mixed with 1/4 c. cool water.
- Cook an additional 5 min.
