Tom's Classic Dark and Stormy
- 2 ounces dark rum
- 1 ounce fresh lime juice
- 1/2 ounce Simple Syrup, recipe follows
- Ginger beer
- Lime wedge, for garnish
- 1 cup granulated sugar
- Fill a Collins glass with ice.
- Pour in the rum, lime juice and simple syrup.
- Top off with the ginger beer and garnish with a lime wedge.
- Combine the sugar and 1 cup water in a small saucepan and bring to a boil.
- When the sugar is completely dissolved, remove from the heat and cool to room temperature.
- Refrigerate, covered, for up to 1 week.
