Tom's Classic Dark and Stormy

  1. Fill a Collins glass with ice.
  2. Pour in the rum, lime juice and simple syrup.
  3. Top off with the ginger beer and garnish with a lime wedge.
  4. Combine the sugar and 1 cup water in a small saucepan and bring to a boil.
  5. When the sugar is completely dissolved, remove from the heat and cool to room temperature.
  6. Refrigerate, covered, for up to 1 week.
