- 1 stalk Celery, Chopped
- 1/4 cups Chopped Red Onion
- 5 Tablespoons Mayonnaise
- 3 Tablespoons Lemon Juice
- 1 loaf Croissants
- 4 leaves Iceberg Lettuce

- Prepare chicken, celery, and red onion.

- Prepare the dressing in a bowl by mixing together the mayonnaise and lemon juice.
- How much of lemon juice to use is based on taste.

- Gently stir the dressing in with the chicken salad ingredients.

- Split croissants.
- Assemble sandwiches by placing lettuce on croissants and topping with chicken salad.
