Creamy Chocolate-Mint Layered Fudge

  1. In a heavy saucepan over low heat, melt the chips with 1 cup sweetened condensed milk.
  2. Add the vanilla extract; combine.
  3. Spread half of mixture into wax paper-lined 8 or 9-inch square pan.
  4. Chill for 10 minutes or until firm.
  5. Hold remaining chocolate mixture at room temperature.
  6. In heavy saucepan over low heat, melt the white baking pieces with remaining condensed milk.
  7. Add peppermint extract and the food coloring.
  8. Spread onto the cold chocolate layer; chill 10 minutes longer or until firm.
  9. Spread remaining chocolate mixture on mint layer.
  10. Chill until firm.
