Low-Fat Apple Walnut Bran Muffins
- 1 tablespoon corn oil
- 1/2 cup brown sugar
- 2 each egg whites
- 23 cups milk skim
- 23 cups applesauce apple sauce, unsweetened
- 2 teaspoons cinnamon
- 1/4 cup walnuts chopped
- 23 cups flour, unbleached all-purpose
- 3/4 cups bran
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cups rolled oats old-fashioned
- Preheat oven to 350F (180C).
- Lightly coat muffin pans with non-stick cooking spray.
- Cream oil and sugar together until smooth.
- Add the egg whites, applesauce, and skim milk, mix well.
- In a large bowl, combine flour, wheat bran, baking powder, baking soda, salt, cinnamon, oats, and walnuts.
- Pour the creamed mixture into the dry ingredients, and stir until smooth.
- Spoon into the prepared muffin pan.
- Bake for 22 to 25 minutes or until the muffins are slightly firm to touch.
- Calories=125 each fat grams=3.2 sodium=202 mgs.
