Crunchy Vegetable Medley
- 1 small onion, sliced into rings
- 3 garlic cloves, minced
- 2 Tbsp. butter or margarine
- 1 c. water
- 1 tsp. beef bouillon granules
- 2 c. broccoli flowerets
- 1 c. cauliflower flowerets
- 1 c. Brussels sprouts, halved
- 1/2 tsp. soy sauce
- 1/8 tsp. dried basil
- 3/4 c. sliced carrots
- 1/2 c. sliced fresh mushrooms
- 1/4 c. chopped green pepper
- 1/2 c. slivered almonds, toasted
- 1/4 c. chopped walnuts
- 3 Tbsp. sesame seed, toasted
- 1 tsp. poppy seed
- Saute onion and garlic in butter in a large skillet until onion is tender.
- Add water and bouillon granules, stirring until granules are dissolved.
- Add next 6 ingredients; bring to a boil. Cover, reduce heat to low and cook 5 minutes.
- Drain well. Combine vegetables and next 6 ingredients, tossing gently.
- Yield: 6 to 8 servings.
