Roasted Lamb with Craisin Stuffing
- 1.5kg leg lamb Safeway 1 lb For $5.99 thru 02/09
- 125g block PHILADELPHIA Cream Cheese, cubed, softened
- 1 cup fresh breadcrumbs
- 1/4 cup craisins
- 1/4 cup mint leaves, finely sliced
- 1 tablespoon fresh rosemary leaves
- 2 cloves garlic, finely sliced
- Finely grated rind of 1 orange King Sooper's 1 lb For $0.99 thru 02/09
- Salt & pepper, to taste
- Combine Philly*, breadcrumbs, craisins, herbs, garlic, orange rind and seasonings.
- Make about 6 slashes into the lamb approx.
- 8-10cm in length, cutting right down to the bone.
- Press stuffing mixture into each cavity.
- Tie the lamb back together with string.
- Drizzle with oil and bake at 190 degrees C for 1.5-2 hours.
- Allow to rest covered for 10 minutes before slicing.
- Serve with seasonal vegetables and meat juices.
