Flora's Tequila Lime Chicken Sandwich
- 2 Boneless, Skinless Chicken Breasts,
- 1/2 cup of Tequila
- 1 Zest of 1 lime
- 1 Juice of 1 Lime
- 1/4 tsp Cumin
- 1/4 tsp salt
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 cup Olive oil
- 10 Leaves of cilantro
- 1 pinch of Red Pepper Flakes
- 1/2 cup mayonnaise
- 1 Just of half a lemon
- 10 leaves of cilantro
- 1 Monterey Jack cheese
- 1 Sauteed Green peppers and Onions
- 1 Tomato
- Mix together your marinade, excluding the chicken breasts.
- If you are using thick chicken breasts I propose cutting in half or pounding down into a thinner piece.
- Put chicken breasts into the marinade and let sit overnight covered in the fridge.
- When you are ready to cook you can decide which way you want to cook your chicken.
- You can cook in a skillet on med-high heat for approximately 4 minutes a side, Grill for approximately 4 minutes a side, or bake in a 350F oven for about 15-20 minutes, or whenever your chicken is fully cooked.
- While the chicken is cooking you can sautee your peppers and onions, if you desire to add them to your dish.
- Mix up your mayo and have ready for assembly.
- I layered my sandwich by adding peppers and onions to the bottom of my bun
- Then added my chicken breast
- Topped with some cheese
- Then put my mayo covered bun on top.
