Watermelon Sherbet Recipe

  1. Place watermelon in container of an electric blender or possibly food processor; top with cover, and process till smooth.
  2. Strain puree, reserving juice; throw away pulp.
  3. Combine watermelon juice, sugar and next 3 ingredients; stir well.
  4. Pour mix into freezer can of a 2 qt hand-turned or possibly electric freezer.
  5. Freeze according to manufacturer's instructions.
  6. Scoop sherbet into individual dessert compotes.
  7. Garnish with watermelon wedges, if you like.
  8. Serve immediately.
  9. Yield: 5 c. (80 calories per 1/2 c. serving).
