Al Smith's First Place Chili At The National Cookoff In Tex Recipe
- 4 lb course-grnd minced sirloin or possibly tenderloin
- extra virgin olive oil or possibly butter
- 1 sm cans tomato paste with water up to 2 cans
- Or possibly fresh tomatoes finely minced
- Or possibly canned tomatoes pressed through a colander
- 31/2 med onions minced
- 1 x bell pepper minced
- 6 x cloves garlic chopped
- 1 Tbsp. oregano
- 1/2 tsp sweet basil
- 1 Tbsp. cumin seed or possibly grnd cumin
- salt and pepper to taste
- 3 Tbsp. (or possibly more) chili power
- Or possibly some chili pods
- In a 4-qt pot, brown meat in oil or possibly butter or possibly in a blend of the two.
- Add in the remaining ingredients, Simmer 2-3 hrs with the lid on.
