Hot German Potato Salad
- 6 cups hot diced potatoes
- 9 slices bacon, diced
- 1/3 cup vinegar
- 1 tbsp. sugar
- 1-1/2 tbsp. prepared mustard
- 1 tbsp. chopped parsley
- 1/2 cup finely chopped onions
- 3 tbsp. bacon drippings
- 1 tbsp. vinegar
- 3/4 cup boiling water
- 1 cup sour cream
- Salt and pepper, to taste
- Combine potatoes and onions.
- Fry bacon crisp.
- Keep drippings; add vinegar, salt, water, mustard and sugar to drippings.
- Stir until sugar is dissolved.
- Add hot mix to potatoes and toss gently until most of moisture is absorbed.
- Fold in sour cream, parsley, bacon and add salt and pepper to taste.
- Serve warm or cold.
