Pea Vegetable Salad (Christmas Relish)

  1. Mix sugar, oil, vinegar, salt and pepper in a saucepan and bring to a boil.
  2. Boil for a few minutes and remove from heat.
  3. Let cool completely.
  4. Combine all vegetables and cheese in a bowl.
  5. Pour cooled sauce over veggies and mix.
  6. Refrigerate.
  7. Best served cold!
  8. Note: Sometimes I use half of a green pepper and half of a red pepper.
  9. Chop peppers by hand, do not use chopper!
  10. And LeSueur peas work just fine.
