Scalloped Egg Plant Recipe
- 1 med. egg plant, cubed
- 1 egg, beaten
- 1/2 c. lowfat milk
- 2 tbsp. butter
- 1 sm. onion, minced fine
- 1 c. dry bread crumbs
- Boil egg plant in salted water about 8 min.
- Drain.
- Saute/fry onion in the butter, till translucent/soft.
- Combine all ingredients together and put into greased casserole dish.
- Top with 1/2 c. buttered bread crumbs or possibly cracker crumbs.
- Bake 30 min at 350 degrees.
