Greek-Style Quesadillas

  1. Preheat oven to 350F
  2. Place garlic in small baking dish.
  3. Top with 2 tablespoons oil.
  4. Bake until tender, about 25 minutes.
  5. Cool.
  6. Combine cucumber, onion, vinegar, sesame seeds, oregano and 3 tablespoons oil in medium bowl.
  7. Let stand 30 minutes.
  8. Peel and chop garlic.
  9. Place in small bowl.
  10. Mix in cream cheese and all olives.
  11. Drain cucumber salad.
  12. Spread 1/4 of cream cheese mixture on cut side of each of 4 pita halves.
  13. Spoon 1/2 cup salad over each.
  14. Sprinkle both cheeses atop salad.
  15. Cover with remaining 4 pita halves.
  16. Heat medium skillet over medium heat.
  17. Butter sides of each pita.
  18. Working in batches, cook quesadillas in skillet until cheese melts, about 3 minutes per side.
  19. Garnish with peppers.
  20. Cut into wedges.
