Lemon Coconut Energy Bars
- 1/4 cup Almonds
- 1/4 cup Cashews
- 6 Dates
- 1/4 cup Almond butter
- 1 tbsp Coconut cream concentrate
- 1 tbsp Lemon extract
- 1 tbsp Lemon zest
- 2 tsp Maca powder
- 1 Optional toppings unsweetened coconut, lemon zest
- In a food processor grind almonds and cashews until they make a grainy, flour like consistency.
- Add in the dates and blend.
- Add in remaining ingredients except for additional toppings and blend until dough begins forming a ball.
- Roll into balls.
- Place toppings on flat plate and roll balls in toppings, coating completely.
