Shrimp Sausage Gumbo
- 1/2 cup flour, all-purpose
- 1 pound sausage andouille sausage, sliced
- 16 ounces tomatoes diced, 1 can
- 1 each onions chopped
- 1 each green bell peppers chopped
- 2 each celery chopped
- 4 cloves garlic chopped
- 3 each bay leaves
- 2 teaspoon creole seasoning
- 1/2 teaspoon thyme
- 4 cups chicken broth
- 3 pounds shrimp large
- 1 bunch scallions, spring or green onions sliced
- 1/4 cup parsley leaves chopped
- Sprinkle flour in a cast iron skillet baked until golden brown.
- Let cool.
- Cook sausage, place in a slow cooker, add tomatoes and next 7 ingredients.
- Whisk together flour and broth, pour into slow cooker.
- Cover and cook 5 to 6 hours.
- Add shrimp and cook on high for 30 minutes.
