Mushroom Quesadillas

  1. Heat oven to 375F.
  2. Combine onions, mushrooms and pepper in 10-inch skillet.
  3. Cook over medium-high heat, stirring occasionally, 4-5 minutes or until onions are softened.
  4. Brush 1 side of each tortilla with butter.
  5. Place tortillas, buttered-side down, on baking sheet.
  6. To assemble quesadillas, layer each tortilla with 1/4 mushroom mixture, 1/4 roast beef and 1/4 cheese.
  7. Fold tortillas in half.
  8. Bake 10-12 minutes or until light golden brown and cheese is melted.
  9. Cut each quesadilla into 4 wedges.
