Seared Salmon with Roasted Pepper Mayonnaise

  1. In a food processor puree peppers, add mayonnaise and lemon juice.
  2. Process until smooth.
  3. Chill.
  4. Sprinkle salmon with salt and pepper.
  5. Melt butter in a large skillet over medium-high heat.
  6. Add salmon and saute until just opaque in center, about 4 minutes per side.
  7. Transfer to serving plate.
  8. Serve with a dollop of Roasted Pepper Mayonnaise as a garnish.
