Seared Salmon with Roasted Pepper Mayonnaise
- 1 jar (7 oz.) roasted red peppers, drained
- 1/2 cup mayonnaise
- 1 tbsp. fresh lemon juice
- 4 (7 oz. each) salmon filets
- Salt and pepper, to taste
- 4 tbsp. butter
- In a food processor puree peppers, add mayonnaise and lemon juice.
- Process until smooth.
- Chill.
- Sprinkle salmon with salt and pepper.
- Melt butter in a large skillet over medium-high heat.
- Add salmon and saute until just opaque in center, about 4 minutes per side.
- Transfer to serving plate.
- Serve with a dollop of Roasted Pepper Mayonnaise as a garnish.
