Bacon Wrapped Tater Tots
- 16 slices Bacon, The Thinner The Better
- 32 Pickled Jalapeno Pepper Slices
- 32 Tater Tots, Defrosted
- 32 Toothpicks
- Vegetable Oil, For Frying
- 1 cup Cheddar Cheese, Shredded
- Preheat oven to 350 degrees F.
- Begin by cutting bacon slices in half so that you have 32 short pieces.
- Place a jalapeno slice at the end of a piece of piece of bacon, top with a tater tot and roll it up.
- Secure it all together by skewering it completely through with a toothpick.
- Repeat with remaining tater tots.
- Heat oil to about 350 degrees F in a fryer or deep pan.
- Fry wrapped tater tots in small batches until bacon is crisped, about 4-5 minutes.
- Do not overcrowd the pan or they will stick together.
- Drain briefly on a paper towel.
- Place on an oven-proof dish and top with shredded cheese.
- Place in preheated oven for 5-6 minutes to slightly melt the cheddar cheese.
- Serve immediately.
