Bacon Wrapped Tater Tots

  1. Preheat oven to 350 degrees F.
  2. Begin by cutting bacon slices in half so that you have 32 short pieces.
  3. Place a jalapeno slice at the end of a piece of piece of bacon, top with a tater tot and roll it up.
  4. Secure it all together by skewering it completely through with a toothpick.
  5. Repeat with remaining tater tots.
  6. Heat oil to about 350 degrees F in a fryer or deep pan.
  7. Fry wrapped tater tots in small batches until bacon is crisped, about 4-5 minutes.
  8. Do not overcrowd the pan or they will stick together.
  9. Drain briefly on a paper towel.
  10. Place on an oven-proof dish and top with shredded cheese.
  11. Place in preheated oven for 5-6 minutes to slightly melt the cheddar cheese.
  12. Serve immediately.
