  1. In a large sauce pot:
  2. Sautee diced onion until just tender in the olive oil (2-3 minutes) over medium heat.
  3. Add can of diced tomatoes.
  4. For a more tomato-based taste, puree the tomatoes in the blender or food processor for about 30 seconds to smooth.
  5. Add frozen vegetables, making sure they are separated (pound lightly for about 10 seconds to break up chunks of frozen vegetables)
  6. Add optional ingredients
  7. Add six cups of water
  8. Add salt and pepper to taste
  9. Simmer on low heat for 45 minutes to an hour
  10. Enjoy!
