Spiced Sweet Potato Stuffing

  1. Preheat oven to 325.
  2. In a medium saucepan, bring broth to boiling.
  3. Add sweet potatoes.
  4. Return to boiling, then reduce heat.
  5. Cover, and cook for 7-10 minutes, or just until tender.
  6. Do not drain.
  7. Stir in raisin bread cubes and jerk seasoning until well mixed.
  8. Add additional broth, if necessary to moisten.
  9. Spoon stuffing into a 1 1/2 quart casserole dish.
  10. Cover, and bake for 25-30 minutes, or until heated through.
