Mom's Potato Salad
- 5 lb red potatoes
- 1 large shallot (thinly sliced)
- 1 1/2 cup good mayonnaise
- 1 cup sour cream
- 2 tbsp red wine vinegar
- 1 dash celery salt
- 1 dash onion powder
- 2 tbsp dried parsley
- 1 Salt & Pepper to taste
- Boil potatoes until fork tender and let cool completely.
- Peel potato skins if desired and cut into bite size pieces.
- Combine all other ingredients and mix well.
- (Sometimes I add more of the dressing, sometimes less.
- Adjust the amount and tweek ingredients to your liking)
- Pour dressing over potatoes and gently coat everything.
- Refrigerate until cold.
