Mexican Rice
- 1 lb ground beef
- 16 ounces salsa
- 11 ounces mexicorn (whole kernel corn with red & green peppers)
- 1 12 cups water
- 1 teaspoon chili powder
- 1 12 cups uncooked instant rice
- 1 cup shredded monterey jack cheese
- Brown ground beef in lg skillet, drain.
- Stir in salsa, corn, water and chili powder, bring to a boil.
- Stir in rice.
- Cover, remove from heat.
- Let stand 5-7 min or until liquid is absorbed.
- Fluff mixture with fork, sprinkle with cheese.
- Cover, let stand 2-3 min or until cheese is melted.
