Homemade Pasta Dough

  1. Sift the two flours into a bowl and make a well in the center.
  2. Break the eggs and add the olive oil.
  3. Mix until all the flour has been combined.
  4. Add a little water or extra flour, if required.
  5. (I have never needed to however) Draw the dough together.
  6. Knead on a lightly floured work surface for about 10 minutes.
  7. I put a timer on and always do exactly 10 minutes.
  8. Until very smooth.
  9. Rub the dough with flour and wrap tightly in plastic wrap.
  10. Let sit for 1 hour.
  11. Now the dough is ready for your pasta machine.
  12. (Unless you plan on using a rolling pin and cutting it by hand!
  13. ).
  14. Remember when you cook homemade pasta it only takes about three minutes when you boil the noodles.
