Homemade Pasta Dough
- 34 cup all-purpose flour (unbleached)
- 34 cup cake flour
- 2 large eggs
- 1 tablespoon extra-virgin olive oil
- Sift the two flours into a bowl and make a well in the center.
- Break the eggs and add the olive oil.
- Mix until all the flour has been combined.
- Add a little water or extra flour, if required.
- (I have never needed to however) Draw the dough together.
- Knead on a lightly floured work surface for about 10 minutes.
- I put a timer on and always do exactly 10 minutes.
- Until very smooth.
- Rub the dough with flour and wrap tightly in plastic wrap.
- Let sit for 1 hour.
- Now the dough is ready for your pasta machine.
- (Unless you plan on using a rolling pin and cutting it by hand!
- ).
- Remember when you cook homemade pasta it only takes about three minutes when you boil the noodles.
