AMIEs GULAY na KALABASA (squash vegetable)
- 1/4 cup cooking oil
- 1/2 tbsp garlic
- 1 large onion
- 1/2 kg pork meat, in slices
- 1 large eggplant, cut in diagonal slices
- 3 cup kalabasa, cut into cubes
- 1 cup rice water or just water
- 1 salt or bagoong and pepper to taste
- Saute the garlic, then onion in hot oil until golden brown.
- Add the pork.
- Season with bagoong and pepper and cover.
- Cook for 15 minutes.
- Add kalabasa and stir.
- Add eggplant (more salt may be added if needed).
- Add a cup of rice water.
- Cover.
- When vegetables are half cooked, uncover and cook til vegetables are done.
- Serve hot.
- Good for 5 servings.
