Cajun Succotash Elisabeth Freeman Recipe
- 1 sm Onion, minced
- 2 x 3 cloves garlic, minced
- 1 tsp Extra virgin olive oil
- 1 can Black-eyed peas
- 1 can Red kidney beans
- 1 lrg Can whole tomatoes
- 1 c. Minced okra
- 1 c. Frzn corn
- 2 tsp Cajun seasoning Salt and black pepper to taste Cooked rice
- Saute/fry the minced onion and garlic in the extra virgin olive oil in a large saucepan.
- Then add in the beans and tomatoes and stir.
- Then add in the cajun seasonings and okra and cook for 15 min.
- Then add in the frzn corn and cook for another 15 min.
- Then add in the last seasonings if you like.
- Serve over rice with warm sauce.
