Creamy Shrimp & Mushroom Soup Recipe
- 1 med. onion, minced
- 1 tbsp. butter
- 2 1/4 c. water
- 1 pkg. (4.9 ounce.) UNCLE BEN'S® Country Inn brand rice dish (creamy mushroom & wild
- rice)
- 2 c. lowfat milk
- 8 ounce. med. shrimp, peeled & deveined
- 3 tbsp. dry sherry
- 3/4 teaspoon salt, optional
- 2 tbsp. flour
- 1 green onion with top, cut into short thin strips
- Cook onion in butter in large saucepan for 3 min.
- Add in water and contents of rice and seasoning packets.
- Bring to a boil.
- Reduce heat, cover and simmer 8 min.
- Stir in 1 1/2 c. lowfat milk, shrimp, sherry and salt.
- Gradually add in remaining 1/2 c. lowfat milk to flour, stirring till smooth.
- Stir into soup.
- Cook over medium heat till soup is thickened and shrimp is opaque, stirring occasionally, about 5 min.
- Top with green onion strips.
- Makes 6 servings.
