Creamy Shrimp & Mushroom Soup Recipe

  1. Cook onion in butter in large saucepan for 3 min.
  2. Add in water and contents of rice and seasoning packets.
  3. Bring to a boil.
  4. Reduce heat, cover and simmer 8 min.
  5. Stir in 1 1/2 c. lowfat milk, shrimp, sherry and salt.
  6. Gradually add in remaining 1/2 c. lowfat milk to flour, stirring till smooth.
  7. Stir into soup.
  8. Cook over medium heat till soup is thickened and shrimp is opaque, stirring occasionally, about 5 min.
  9. Top with green onion strips.
  10. Makes 6 servings.
