Fingerling Slices in Duck Fat
- 14 cup duck fat
- 1 12 lbs fingerling potatoes, sliced in thirds
- 1 large garlic clove, finely chopped
- 14 cup chopped fresh thyme
- salt and pepper
- In skillet, melt fat over medium high heat.
- Toss in potatoes, garlic, and thyme.
- Season to taste with salt and pepper.
- Cook over moderate heat for 25 minutes or until potatoes are cooked through.
