A1 Watermelon Salad
- 1/4 cup balsamic vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon garlic chopped
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper freshly ground
- 3/4 cup olive oil
- 3 cups watermelon cut into 2-inch cubes
- 1 cup feta cheese crumbled
- 1/2 each red onion very thinly sliced
- 1 x black pepper to taste
- Add vinegar and Dijon mustard in small bowl, whisk until mix.
- Add garlic, salt, and pepper into mixture.
- Slowly stream olive oil into dressing while whisking.
- Keep dressing refrigerated until ready to use.
- Combine watermelon, feta cheese, and red onion in large bowl.
- Season with black pepper.
- Gently toss salad with half dressing.
- Refrigerate salad at least 30 minutes.
- Drizzle remaining dressing over salad before serving.
