Seafood Nicolson
- 1 lb Medium Shrimp
- 1/2 lb. bay scallops
- 3/4 lb Lobster Meat
- 1 pt. Cream (Heavy)
- 1/2 c. Wine
- 1/2 Tbsp Fresh Parsley
- 1 lb Linguine (Cooked Aldente)
- 1 Bunch Broccoli (Cut into Small Pieces)
- 2 Leeks (Chopped)
- 1 Medium Onion (Chopped)
- 1 Red Pepper (Chopped)
- Juice of 1/2 Lemon
- 1 1/2 Tbsp Fresh Dill (Chopped)
- 4 Tbsp Butter
- Salt & Pepper
- 5 Cloves Garlic (Chopped)
- 1/3 c. Parmesan Cheese
- 1. Put butter, leeks, onion, garlic, & red pepper into pan and saute.
- 2. Add 1/2 c. wine, parsley, lemon juice, salt, & pepper.
- Cook 2 minutes. Add cream.
- 3. Cook several minutes on simmer. Add scallops & broccoli
- and cook for a few more minutes.
- 4. Just before serving add shrimp and cook till just pink.
