Gouda and Dried Fruit Spirals

  1. Preheat oven to 400 degrees F.
  2. In a food processor pulse apricots 2 or 3 times, then add raisins and cranberries and chop.
  3. Do not over-process.
  4. Stir in spices and cranberry juice and set aside.
  5. Roll out pastry to 1/4 inch thickness, leaving straight edges.
  6. Spread the fruit mixture over the pastry, sprinkle cheese over, then roll up into a cylinder.
  7. Cover with plastic wrap and refrigerate one hour or freeze for later use.
  8. Thaw, if frozen, and cut into half inch slices.
  9. Place on a greased baking sheet or use parchment paper and bake for 10 to 15 minutes, until golden.
