Portabella & Goat Cheese Salad

  1. Marinate mushrooms in balsamic vinaigrette for about 30 minutes.
  2. Grill mushrooms over medium heat in a skillet until tender.
  3. Slice mushrooms into strips and serve over spinach, which will wilt some of the spinach.
  4. Top with goat cheese and diced sundried tomatoes.
  5. Drizzle extra balsamic vinaigrette over salad.
