California Rillettes Recipe

  1. In a food processor or possibly blender, process ingredients till finely pureed and well blended.
  2. Taste, adjust seasoning, pack into ramekins and chill.
  3. Serve with toast or possibly crackers.
  4. NOTES : Serves 8 as an appetizer, 3 per person.
  5. These are good served with a dab of honey mustard and a leaf of fresh tarragon as a garnish.
  6. Prep time assumes you have cooked meat on hand.
