Baked Sweet Potatoes with Chipotle Black Beans
- 2 whole Large Sweet Potatoes
- 1/4 cups Vegetable Broth
- 1 cup White Onion, Chopped
- 2 cloves Garlic, Minced
- 2 teaspoons Cumin
- 1 teaspoon Oregano
- 1/4 teaspoons Cinnamon
- 1 teaspoon Lemon Juice
- 1 whole Chipotle Pepper In Adobo Sauce, Diced (or 1/2 Pepper For Less Spice)
- 1 can Black Beans, (15 Oz) Drained, Not Rinsed
- 2 teaspoons Butter
- 1/2 cups Cheese Of Choice, For Topping
- 1) Preheat oven to 400 F. 2) Clean and pierce sweet potatoes several times with a fork.
- Bake sweet potatoes in the preheated oven for 45 minutes or until tender.
- 3) In meantime, heat stove to medium.
- When hot, spray a pan with cooking spray and add vegetable broth.
- 4) Add onions and garlic.
- Stir and let cook for 4 minutes or until onions are translucent.
- 5) Add seasonings, lemon juice, chipotle pepper and black beans.
- Stir well.
- Turn down heat and let simmer until potatoes are finished cooking.
- To Serve: Split top of potato lengthwise and place one pat of butter inside of each.
- Spoon chipotle black beans into potatoes, then top with your choice of cheese.
