Easy Banana Condiment

  1. At least 1 day before, place bananas in fridge to blacken.
  2. Mash bananas until almost smooth.
  3. Add juice & raisins.
  4. In a pot, bring to a boil, stirring constantly until mixture thickens, about 10 minutes.
  5. Cool slightly before serving.
  6. Can be stored in the fridge for 2 or 3 weeks.
  7. Serve with jolof rice.
  8. Makes 1 cup.
