African Vegetarian Stew Recipe
- 4 sm Kohlrabies, peeled, chunks**
- 1 lrg Onion, minced
- 2 x Sweet potatoes, peeled,chunk
- 2 x Zucchini, sliced thick
- 5 x Fresh tomatoes, (16 ounce can)
- 1 x 15 ounce Can garbanzo beans & liquid*
- 1/2 c. Couscous or possibly bulgar wheat
- 1/4 c. Raisins
- 1 tsp Grnd coriander
- 1/2 tsp Grnd turmeric
- 1/2 tsp Grnd cinnamon
- 1/2 tsp Grnd ginger
- 14 tsp Grnd cumin
- 3 c. Water
- ** Parsnips may be substituted for the kohlrabi.

- Chick-peas Serve the couscous separately, if you like.
- Combine all the ingredients in a large saucepan.
- Bring to a boil, lower the heat, and simmer till the vegetables are tender, about 30 min.
