Homemade Sage Pasta
- 2 cups Flour
- 1/4 cups Sage (or Whichever Herb Is Your Favorite)
- 4 whole Eggs
- Salt
- - Pour flour into a large bowl.
- Chop up your herb of choice into small pieces and combine with the flour.
- Make a well in the middle of the flour.
- Crack the eggs (whole) into the center and start to incorporate them into the flour.
- (This will be sticky, but its fun to use your hands.)
- When it all comes together, move the dough to a floured surface and start kneading it with your hands for a few minutes.
- Step away from the dough.
- Seriously.
- For about 20 minutes, more if youd like.
- Do you have a pasta roller?
- Great!
- Start rolling it out.
- If youre like me and use a rolling pin, though, dont fret... it will just take a little longer and a little more muscle.
- Try to get the dough as thin as possible.
- I mean *really* thin.
- Like a few sheets of paper thin.
- As soon as you add the fresh pasta dough to your boiling water, they plump up a LOT.
- Cut the pasta in any shape you want.
- Long strips are the easiest for me.
- I use a pizza cutter to make the process go a little faster.
- Bring a large pot of water to a boil and add a decent handful of salt.
- The pasta should only take 2-3 minutes to cook.
- Enjoy with whatever sauce, toppings, deliciousness you prefer to eat.
