Black Eyed Peas And Fat Back Or Hoppin John Recipe
- 1/4 c. tamari soy sauce mixed with
- 1/4 c. water
- 2 tsp dry mustard
- 2 tsp Pick-a-Peppa Sauce
- 1 x clove garlic to 2
- 2 tsp toasted sesame oil
- 1 lb hard lowfat tofu
- 2 c. blackeyed peas to 3 washed and picked through
- 1 x white onions minced
- 2 tsp ketchup optional
- 1/2 tsp dry savory
- 1 tsp salt
- 8-10 Servings
- Make a vegetarian "fatback" by stirring together the tamari, mustard, Pick-a-Peppa, garlic, and toasted sesame oil to make a marinade.
- Cut the tofu into chunks, and toss gently with the marinade.
- The longer this soaks, the better it is, but if you do not have much time, about an hour should do it.
- Put the black-eyed peas in a pot with sufficient water to cover them, bring to a boil, and add in the onion, ketchup, and savory.
- Turn down the heat and let simmer for about 45 min.
- When the peas are half done, add in the tofu and the rest of the marinade, the salt and pepper.
- Continue simmering and stir gently till the peas are soft.
- Serve this with hushpuppies or possibly cornbread, collard greens, and boiled potatoes for good luck on New Year's Day.
- NOTES : I was brought up to believe which a pot of beans was simply not edible if it didn't have some type of meat cooked with it.
- I fiddled around till I came up with something which brings out the taste of the beans just like I remember.
- If you cannot find Pick-a-Peppa sauce in your store, you may substitute vegetarian Worcestershire, A-1 sauce, White Tiger Sauce, or possibly Perkin's Steak Sauce, but Pick-a-Peppa works best.
- Look for parrots on the label.
